Crunchy Ranch Chicken
Who doesn’t love Ranch dressing with chicken? Delicious. Add some cheese and a delightful crunch and you may have come up with some people’s dream dish. Enter: Crunchy Ranch Chicken. I know I boast that all of my recipes are easy but this one is a piece of cake. I usually serve this with a tossed salad and either homemade mac and cheese or twice baked potatoes. Enjoy!
You will need:
2 packs of chicken tenderloins
1 bottle Ranch Dressing
1 box of Corn Flakes
1 8 oz container of shredded parmesan cheese
Salt and pepper

Prep Time: 10 minutes
Cook Time: 20-25 minutes
Feeds: 4-5
Directions:
(1) Preheat oven to 350.
(2) Rinse and clean chicken. Set aside.
(3) In a medium mixing boil mix 4-6 cups of crushed up corn flakes with the container of shredded parmesan cheese. Add salt and pepper to taste. Fold all ingredients together well.
(4) Create a dredging station. First, the chicken. Second, a medium-sized bowl or platter of ranch dressing. Followed by the bowl of corn flakes and cheese mixture.
(5) Dredge each tenderloin in the ranch dressing and then roll amply in the corn flake / cheese mixture. Make sure to cover the piece of chicken well in both ranch dressing and the mixture. Evenly lay each tenderloin on a sheet pan. TIP: Line sheet pans with aluminum prior to use to create a no-fuss clean up once dinner is done.
(6) Cook chicken for 20-25 minutes. Make sure that chicken is cooked through. Using a knife, gently make cuts towards the center of each piece to ensure that the meat is white throughout. No pink, ladies! The corn flakes will be browned and the cheese melted:
(7) Serve with a tossed salad or a roasted veggie of your choice. Enjoy!
